Super greens and soba noodles

This is such a simple but delicious recipe, full of fresh flavours and crunch! I adapted a Yotam Ottolenghi recipe to include the spicy slaw on top and the combination is so tasty. It is also really nutritious- full of polyphenols, healthy fats, plant protein and fibre.


For the noodles you will need ...


2 portions of Soba noodles (300g)

1 Avocado 

Pistachios 

1 lime ( juice and zest) 

1 tbsp soy sauce 

1 tbsp sesame oil

2 tbsp sesame seeds

Large handful of coriander 

Large handful of mint 


For the slaw....


1/2 small red cabbage 

1 apple 

1 tbsp apple cider vinegar 

1 fresh chilli 

1 tbsp soy sauce 

Small piece of ginger crushed 

Salt and pepper to taste 


Method 


  1. Cook the soba noodles according to the packet instructions and set aside to cool. 

  2. Chop the coriander, mint and avocado and add to a large mixing bowl along with all the other ingredients and set aside.

  3. Now make the slaw by slicing the cabbage and apple into very thin strips and add to a large bowl along with all the other slaw ingredients and mix thoroughly.

  4. Revive your noodles by pouring cold water on them in a colander and then remove any excess water and add them to your mixing bowl. Mix everything together and then transfer to your plates. 


Top with a generous handful of the slaw and salt and pepper to taste.
